I just got my new glasses today!  And wow!  I don’t know how I was functioning before!   These are so clear!   I mean totally clear and everything is so sharp!  I am amazed.   They are taking a bit to get used to, because I bought a pair that are small.   I have never owned a pair with such small glass area.  they are sorta squarish.. but ovalish at the same time.  Odd huh?   yeah Love them!

Well I went to Lowe’s today and they still didn’t have my peppers.  So I bought some different ones!  We shall see.   My broccoli is coming along nicely!   And I am going to have a ton of strawberries.   I looked today.  Birds are going to be an issue.  They are spying my strawberries already.  Might have to get some tin cans and try to keep them from coming in my strawberry patch.  I want strawberry jam this year!  Yummy!

So far everything but the carrots are coming up nicely!   It always surprises me every year!

The girls are coming down with something. yeah.  again. .i mean really?   Is there some universal law that says they cannot be healthy for more than 2 weeks.   I mean come on.   ugh.  yeah a bit overwhelmed with that.   I think Martha has slap cheek fever.   And have no idea what Becca has.  an ear infection if I had to guess.

Tomorrow I wanna talk about the house.  But it is getting late and want to go to sleep.   Tomorrow is a new day!

Given to me by a good Georgian (the country of Georgia) Ubidak!   Thanks sweety!

4 cups all-purpose flour

1 1/4 tsp salt

1 1/4 c warm water

1 pound mixed ground beef and ground pork

1/2 tsp freshly ground black pepper

1 1/4 tsp garlic salt

pinch cayenne pepper

1/4 tsp caraway seed

3 small onions finally minced

1/2 c beef broth.

Combine four, salt, and warm water to make a firm dough.  Knead for 5 mniutes, then let dough rest, covered, for 30-40 minutes.

Meanwhile, make the filling by mixing the ground meats, spices, and minced onion.  Kneed in the beef broth with your hands.

Divide the dough into 25 pieces.  On a loured board and using a floured rolling pin, roll each piece out into a 6-in round.   Place about 2 Tbsp  of the filling in the center of the round.   Make small pleats all the way around the filling by folding the edges of the dough towards the center.  Move in a clockwise direction, allowing each fold to overlap the next one.  The filling should be completely enclosed by the dough.  Twist the pleasted dough together at the center to seal, and break off any excess dough at the top knot.

Meanwhile, boil a large pot of salted water; drop the dumplings in batches and allow to cook for 12-15 minutes.

1 can of black beans rinsed and drained

1/4 med onion chopped

1/4 cup of green pepper chopped

3 cloves of garlic

1 lb of ground beef / turkey/ pork or chicken

1/4 cup of ground psyllum husk

1 pack of  favorite burrito seasoning

Put onions, garlic in a pan with some Extra Virgin Olive Oil, cook until translucent.  Add green peppers and the ground meat.   brown.    While the meat is cooking, take the beans and puree them in a food processor with no liquid.   I know it looks nasty.. just stay with me!   Then add those dreaded psyllum husks.  I promise you will never know they are there!  They add lots of fiber to your meal.  And we can all use extra hidden fiber!!!!    blend in the husks.   Once the meat is brown, if excess fat, drain.  Add in the beans and husks, the seasoning packet and however much liquid it calls for on the packet.  (I normally add a cup of water).   Cook for 5 minutes..   Voila!   Add topping as you like!
